Bacon- Wrapped Chicken Relleno Recipe

INGREDIENTS:

500g minced chicken breasts

1 whole deboned chicken

25g peanuts

25g raisins

230ml all-purpose cream blanched carrots strips

6 pcs hard boiled quail eggs

1 tsp salt

500g beaten eggs

50g white onion brunoise

100g all-purpose flour

1 tsp salt and pepper

1 tsp paprika

2 pcs big apples

INSTRUCTIONS:

1. Combine minced chicken, raisins, peanuts, brunoise onion, all-purpose cream, egg,

flour, salt and pepper.


2. Stuff filling into deboned chicken together with quail egg, carrot strips and chorizo de

bilbao.


3. Wrap chicken with bacon strips and cover with aluminum foil. Roast in oven for one hour

or until done.


4. Remove the foil then brush with softened butter. Sprinkle with paprika. Place in

salamander until golden brown.


5. Cut into portion size. Arrange on plate and garnish with apple.
